These are individual meringue cups with lime cream and fresh berries from the The Cake Book by Tish Boyle and I made them for this month's Cake Slice Bakers Challenge. Basically, you make the meringue nests (a first for me and I felt so proud of myself!), then you make a lime curd (another first and I was utterly amazed at how easy it is to make lime curd - and so delicious!), mix it through some whipped cream, fill the nests with it then sprinkle on some berries and a dusting of icing sugar.
I have to say this was a really easy dessert but quite impressive. Everyone in my family enjoyed one and usually they only eat desserts if they are chocolate so I was a very happy Mummy.
The recipes in this book are so easy. She outlines every step to make it easy to follow and there are recipes for every occasion.
I loved it too! And my sister (who got to try it) thought it was amazing!She even felt like she needed to "dress nicer" to eat something so delicious! Funny! My husband didn't like it! (boooh!) but he is not fond of fruit desserts... (except for apple pie! LOL!)

Ha ha - I know what you sister means - it feels like a posh dessert and you SHOULD be dressed in a lovely summer dress. :)
ReplyDeleteI have piping envy right now...the meringues look gorgeous and that spoonful of lime curd makes me want to go digging in my fridge for the rest of mine.

ReplyDeleteOh what a gorgeous dessert, they look fantastic. The only thing missing is a grating of chocolate on the top ;-) I've fallen in love with fruit curds and have tried a few now - lime was a really good one. I'm waiting for the raspberry season to try those next. I've been mixing mine with mascarpone and placing in tarts or topping cakes, but strangely haven't yet tried it mixed with whipped cream.
